Gilbert R. Lagunas, is a successful restaurateur, business manager and Maitre D’hotel, and consistently one of the top sales staff at each restaurant. He mastered the art of elegant waitering and has ample knowledge of wine and food pairing. He provides his expertise to improve fine Californian restaurants operations through consultation and his mastery of service staff training with First Class Waiter.

  • Over 30 years selling food and beverages at establishments in New York, Eureka, Napa, El Dorado Hills and Sacramento, California generating annual gross sales ranging from $450 thousand to $2.5 million.
  • Owning and managing For Friends Only Restaurant and managing the Ingomar Business Club and Serrano Country Club dining room.
  • Supervising and training restaurant and catering staff, was responsible for food and beverage purchasing, cost control, and catering.
  • Helping open Il Fornaio Restaurant in Sacramento, Culinary Institute of America’s Greystone Campus, and Pinot Blanc, Saint Helena.
  • Overseeing advertising, acting liaison between board of directors, club members and employees, and interfacing with regulatory agencies.
  • Serving as restaurant critic for a regional business magazine.
  • Hosting government and entertainment VIP’s, ensuring customer well being and comfort.
  • Coaching restaurant employees and owners, and advising corporate clients on the Sacramento market.
